Massimo spent nine years apprenticing with chef Georges Coigny, until he moved to the city center for a new project that would bring him worldwide fame, the Osteria Francescana. This restaurant opened its doors in 1995 and in 2012 received its first Michelin star. Today, it has three Michelin stars and it is common to see the restaurant at the top of lists of the best restaurants in the world (ESPRESSO, Gambero Rosso, Touring Club, 50 Best Awards).
Massimo worked alongside Alain Ducasse at Louis XV and Ferran Adrià at El Bulli, which encouraged him to take innovation to other terrains and take risks. On the literary side, Bottura has published several books including Never Trust a Thin Italian Chef (2015). In it, he talks about his source of inspiration in the kitchen and shares 48 unpublished recipes.
